TJ's Grilled Kim-Cheese Sandwich

This magnificently melty, gloriously golden sandwich will change grilled cheese forever.
For this recipe, use Trader Joe’s Organic Mayonnaise. It has a higher smoke point than butter, making it less likely that your bread will burn, and you won’t have to wait for your butter to soften, giving you more time to enjoy this punchy, piquant, kimchi-packed grilled cheese. Yes, please!
Serves: 1 person
Time: 15 minutes
Ingredients
- 2 slices TJ’s Sliced Sourdough Bread
- 2 tablespoons TJ’s Organic Mayonnaise
- 1 slice TJ’s Sliced Muenster Cheese
- 1/3 cup TJ’s Kimchi, roughly chopped
- 1 slice TJ’s Sliced Provolone Cheese
Directions
- Spread an even layer of mayo on each slice of bread.
- Heat a medium-sized, non-stick pan over medium heat.
- Add one slice of bread to the pan, mayo side-down, then top with Muenster cheese, chopped kimchi, and Provolone. Top with the remaining bread slice, mayo-side-up.
- Cook 4-5 minutes, until the bread is golden and the cheese begins to melt.
- Carefully flip the sandwich, cover and cook another 4-5 minutes until the bread is golden and the cheese is fully melted. Serve immediately.
